Kitchen King Masala

VEG KOLHAPURI

A spicy mixed vegetable curry inspired by authentic Kolhapuri flavors.

INGREDIENTS

For Vegetables
2 Cups Mixed Vegetables (Carrot, Beans, Cauliflower, Peas)
1/2 Cup Paneer Cubes (Optional)
For Base Paste
1 Medium Onion (Sliced)
2 Tbsp Fresh Coconut (Grated)
1 Tbsp White Sesame Seeds
1 Tsp Poppy Seeds (Khus Khus)
For Cooking
3 Tbsp Oil
1 Large Tomato (Pureed)
1 Tbsp Ginger Garlic Paste
1/2 Tsp Turmeric Powder
1 Tsp Spicy Red Chilli Powder
1.5 Tbsp Zenzaika Kitchen King Masala
Salt to Taste
Fresh Coriander (For garnish)

👩‍🍳 COOKING INSTRUCTIONS

Boil or steam the mixed vegetables until they are 80% cooked. Set aside.

In a pan, dry roast the sliced onions, grated coconut, sesame seeds, and poppy seeds until golden brown. Let cool and blend into a smooth paste.

Heat oil in a kadai. Add ginger garlic paste and sauté until fragrant.

Add tomato puree and cook until the raw smell disappears and oil separates.

Add the prepared onion-coconut paste and cook for 3-4 minutes.

Add turmeric, red chilli powder, and Zenzaika Kitchen King Masala. Mix well.

Add the semi-cooked vegetables and paneer cubes. Toss them in the masala.

Add 1 cup of warm water and salt. Cover and let it simmer for 7-8 minutes until vegetables are fully tender.

Garnish with fresh coriander.

Serve piping hot with chapati or paratha.
